Eggplant-Valor subzi

Ingredients :
3 small eggplant, 1 cup of valor (hyacianth beans), 1 tbsp ajwayen, 1 chopped potato, 1 chopped tomato, 1/2 cup water, 1 tbsp salt, chili, turmeric & coriander powder, 1 tbsp garlic paste

Directions :
1. In pressure cooker, add 1 tbsp of oil to heat
2. Add ajwayen (carom seeds)
3. Add 1 tbsp garlic paste and let it saute
3. Add all chopped vegetables i.e. eggplant, potato, valor, tomatoes
4. Add 1/2 cup of water and let it cook and saute for 5 mins
5. Add 1 tbsp of chili powder, 1 tbsp of coriander powder, 1/2 tbsp of turmeric powder
6. Add salt to taste
7. Pressure cook it till 2 whistles
8. Garnish subzi with coriander leaves and fresh shredded coconut
9. Serve with roti or rice
